My chocolate Matilda cake, filled with a cream cheese mascarpone frosting and fresh strawberries, topped with strawberries and a dusting of cocoa.
This cake genuinely tastes no different as Gluten Free if needed, and I do so many variations of this cake - salted caramel, Tiramisu, pistachio cream. Its such a great chocolate cake that is not too sweet, it stays moist for days and is so tasty. A really popular cake in the cafe, nearly always goes on Day 1!
This can either be a 2 layer 8 inch (serves 12), or a 2 layer 9.5inch (serves 16, slightly thinner layers)
